Herby Stuffed Mushrooms

Suitable at any time of the day…

Serves: 2-4


  • 4 large flat mushrooms
  • 2 tsp fresh thyme leaves
  • 4 tbsp fresh parsley leaves, finely chopped
  • 15g pumpkin seeds
  • 25g white breadcrumbs
  • zest of ½ lemon
  • Pinch salt and pepper


  1. Pre-heat the oven to 180°C (fan).
  2. Remove the mushrooms stalks.
  3. Combine the remaining ingredients together, then spoon into the tops of the mushrooms.
  4. Bake for 5-8 minutes.
  5. Serve with some eggs or fish of choice.
