Herby Stuffed Mushrooms
Suitable at any time of the day…
- 4 large flat mushrooms
- 2 tsp fresh thyme leaves
- 4 tbsp fresh parsley leaves, finely chopped
- 15g pumpkin seeds
- 25g white breadcrumbs
- zest of ½ lemon
- Pinch salt and pepper
- Pre-heat the oven to 180°C (fan).
- Remove the mushrooms stalks.
- Combine the remaining ingredients together, then spoon into the tops of the mushrooms.
- Bake for 5-8 minutes.
- Serve with some eggs or fish of choice.
