Chicken fajita stack

Who says you need a wrap to enjoy a fajita..!!!  why not try this ‘stack fajita’ recipe if you are on the textured phase of your diet – healthy, quick and delicious.

Serves: 1


  • Half a chicken breast – sliced right through the middle to give 2 thin pieces

  • 2 lettuce leaves

  • 2 slices of a beef tomato


  1. Fry the chicken in spray oil until cooked through
  2. Stack it into a sandwich style with the salad vegetables – so lay a lettuce leaf on a small plate – add one piece of chicken, add a slice o tomato and repeat
  3. Top with a tsp of low fat mayo or salad cream and some freshly ground black pepper
