Stuffed Peppers with Tuna


Serves 2

1 red pepper, halved & deseeded
1 yellow pepper, halved and deseeded
2 small tins tuna in spring water, drained
2 tbsp tomato puree
¼ red onion-finely chopped
1 tomato, deseeded and diced
2 matchstick box sized pieces of cheddar cheese (reduced fat, approx. 50-60g)
Black pepper


Mix together the tuna, tomato puree, chopped onion, diced tomato and half of the cheese.
Season with pepper.
Spoon the mixture into the pepper halves and sprinkle the remaining cheese over the top.
Bake in a pre-heated oven at 180 degrees for 15 minutes.
